Our patisserie courses prepare students to work at pastry cook and specialist patissier levels with a broad range of skills for the Hospitality and Commercial Cooking Industry: think cafes, restaurants, bakeries, and hotels.

Academia’s teaching covers advanced technical patisserie skills as well as in-depth knowledge in finance, staff supervision and quality management. You’ll also learn how to use equipment, ensure the health and safety in the kitchen, and check ingredient quality.
Academia students can choose to continue their studies post Certificate III and IV.
You can also package your technical training with a Diploma or Advanced Diploma of Diploma Hospitality Management (incorporating a major in Patisserie) to round off your training and learn the skills required to work as head patissiers.

Take your hobby to the next level and get qualified as a pastry chef with the Certificate III in Patisserie.
With the right qualifications, a passion for sweets can turn into a fulfilling career. Through our patisserie courses, you may find yourself working in hotels, restaurants, cafes, and bakeries, creating decadent treats for guests and patrons.
During the Certificate III you'll learn fundamental skills to prepare and create patisserie treats in a professional commercial kitchen.
This course is a pathway to the Certificate IV (below), and includes a 10-week placement, where students will work two days a week in an Academia-affiliated hotel.
Combine a strong work ethic team with a passion for creating culinary delights in the kitchen with the Certificate IV in Patisserie!
Incorporating the study units of the Certificate III in Patisserie, the Certificate IV extends your skills by majoring in sugar and chocolate.
This qualification will allow you to take on a more senior or managerial role in the kitchen, supervising your team as a qualified cook who specialises in patisserie.
The Certificate IV includes placement for two days a week over 10 weeks in an Academia-affiliated hotel, where you’ll be able to put your newly acquired skills into practice!
Academia will help students obtain placement.
